Ingredients:
- 2 cups self-raising flour
- 2 cups grated cheese (your choice of cheese)
- 1 egg
- Cold water (just less than 250ml)
- A pinch of salt and pepper
Instructions:
- Preheat your oven: Set the oven to 200°C (392°F) and line a baking tray with parchment paper.
- Prepare the dry mix: In a large mixing bowl, combine the self-raising flour and grated cheese. Add a pinch of salt and pepper to enhance the flavour.
- Prepare the wet mix: In a separate bowl, whisk the egg. Gradually add the cold water to the egg, stirring gently until fully combined.
- Combine wet and dry ingredients: Make a well in the centre of the flour and cheese mixture. Pour in the egg and water mixture. Using a spatula or your hands, mix until just combined. Be careful not to overmix, as this can make the scones dense rather than fluffy.
- Shape the scones: Turn the dough out onto a lightly floured surface. Gently pat the dough to about 2 cm thickness. Use a round cutter or a glass to cut out scone shapes and place them on the prepared baking tray.
- Bake: Place the tray in the preheated oven and bake for 12-15 minutes, or until the scones are golden and cooked through.
- Serve: Allow the scones to cool slightly on a wire rack before serving. Enjoy them warm, either on their own or with a smear of butter.
